Stuffed Pork Loin Recipes
Ingredients:
- 1/2 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1 tablespoon butter
- 1 teaspoon coarse salt
- 1 teaspoon dried rosemary
- 1 medium onion (cut into thin strips)
- 1 teaspoon Dijon mustard
- 1 cup apple juice
- 2 cloves garlic (minced)
- 2 large tart apples (thinly sliced)
- 2 tablespoons brown sugar
- 5 pounds boneless center cut pork loin roast
Directions:
First of all, you need to preheat your oven to 325°F before preparing the ingredients. Next, combine the garlics, thyme, salt, rosemary and pepper in a bowl. Now, cut down the roast lengthwise so that it opens like a book so that you can rub the garlic mixture onto the cut sides of pork.
Now, you need to melt the butter in a large skillet over medium heat. You can now add the sliced apples and onion into the skillet. Cook and stir them for about 10 minutes until they are soft. Next, it's time that you stir in the brown sugar and mustard.
When it's done, you can use this mixture and spread it evenly onto one cut side of roast. Next, close the halves and tie the roast with a kitchen string. Now, place the roast on a rack in shallow roasting pan and pour the apple juice over the roast. Be sure to rub some garlic mixture on the outside of roast.
After you have done that, it's time that you put the roast in the oven and cook it for about 2 1/2 hours. Be sure to insert a thermometer to the thickest part of roast so that when it registers 155°F, you know that it's time to remove the roast from the oven. Be sure to let the roast stand for 15 minutes for it to cool down before slicing it. Serve and enjoy this great pork dish with your family and friends!
